Cowboy Caviar

Some call this Texas Caviar, but in this post I decided to go with Cowboy Caviar. It sounds robust, and can surely be part of any meal, for any occasion. The beauty of this dish is that there are no rules of what goes in the bowl. Yet, I would suggest a legume at least. My favorite ingredient in this Cowboy Caviar bowl is the cannellini beans, because they are creamy with a slight nutty flavor. As for the rest of the ingredients….be mindful and add what you crave. However, the recipe for this dish is listed below.

Since all research on my diagnosis of hypothyroidism had me believe that consuming a plant-based diet was more healing and energizing, I decided to slowly inch away from animal protein. Yet, like most of you, the thought of “Where will I get my protein?” heavily crossed my mind. So, I discovered that beans and lentils have the highest amount of protein among other plants. Not only that, but these legumes also keep me full. What a great meat substitute! National Institute of Health (NIH) goes on to say that a plant-based lifestyle has immense evidence on health benefits, plus it lowers the risk for heart related problems and type 2 diabetes. The more I research nutrition from food, the more I find it mind blowing on how nutritious plant food, like legumes are. For example, “one serving of legumes, which is one-half cup, provides about 115 calories, 20 g of carbohydrate, 7–9 g of fiber, 8 g of protein, and 1 g of fat. Legumes also have a low glycemic index, generally ranging between 10 and 40.”

Ingredients:
  • 1 red bell pepper, chopped
  • 2 c cherry tomatoes, halved
  • 1/2 small sweet onion, chopped
  • 1/2 c fresh basil, chopped
  • 1 c fresh parsley, chopped
  • 2.5 c cannellini beans, cooked
  • 1/2 c cucumbers, chopped
  • 1/2 c radishes, chopped
  • 2 tbsp lemon juice, freshly squeezed
  • salt and pepper, to taste
Method:
  1. Wash and chop all ingredients accordingly
  2. Combine them all in a bowl
  3. Mix until well incorporated
